Once prepared, the roots of the balloon flower (Platycodon grandiflorus) are edible. You can also eat its flowers. Enjoy the harvest from spring to fall.

The root is edible after processing. Soak them in salt water for a few hours then rinse in cold water until the roots are no longer bitter. This is how Korean ‘doraji’ is prepared, stir-fried, marinated, seasoned or with a kimchi spice sauce.
