Pear trees are generally easier to grow than other commercial fruits and are a good choice for heavy clay soils. The Doyenné du Comice, or pear tree ‘Comice’ (Pyrus communis), is a variety that appeared in 19th-century France, with a rich history. To this day, it is internationally renowned as the juiciest, most aromatic, and sweetest of European pears. Due to its extremely juicy texture, it is not ideal for cooking, except for making pear butter or a divine compote. It is best enjoyed fresh, in classic combinations: with fine, creamy cheeses like camembert, brie, or blue cheese, paired with nuts, or served with watercress, mint, and sweet onions, in spinach salads, or even in crepes with arugula and maple syrup. It also makes a delicious granita, with a touch of honey and rosemary. Its thin, delicate skin makes it fragile for transport, so it is best suited for home cultivation.
It should be planted in a sheltered spot, as there is a risk that the pear tree ‘Comice’ may freeze north of Montreal, despite its late bloom which helps avoid late spring frosts. It is resistant to bacterial fire blight and requires cross-pollination.
