Virginia knotweed
Polygonum virginianum
Virginia knotweed (Polygonum virginianum) offers us a green foliage that can be harvested and consumed from spring to fall. Its flowers and seeds are also edible and can be harvested from late summer to fall.
Warning: Like rhubarb and sorrel, Virginia knotweed contains oxalic acid, which is beneficial when consumed in moderation, but should be avoided if you are at risk of developing kidney stones.
