Canada Wild Ginger
Asarum canadense
The surface rhizome of this ground cover called Canada wild ginger (Asarum canadense) doubles as a chai spice blend, with notes beyond ginger: cardamom, clove, pepper, and almost cinnamon. The endangered native Canada wild ginger is persecuted for its aromatic root even in the cool of maple groves.
Edible: aromatic root.
Replaces: Indian chai, Asian ginger, cardamom, allspice.
Pairs with: root vegetable soup, squash curry, oatmeal cookies, carrot cake, gingerbread, ice cream, hot cider, and kombucha.
