The costmary (Tanacetum balsamita) has large, evergreen, toothed, thick, silvery-green leaves, 10 to 30 cm long. The small yellow flowers in “boot buttons” are gathered in terminal corymbs throughout the summer. Fresh or dried, the leaves give off a balsamic odor with complex notes close to sage, lemon balm and mint.
