The dog rose (Rosa canina), still being tested at the nursery, is known to be productive in rosehips (the fruit also called dog rose) and resistant to most diseases. Its intoxicating and sweet fuchsia blooms, from June to October, are accompanied by the fruits that develop a subtle and floral taste of rose from summer. These are superimposed and will last like Christmas baubles during the holiday season. A careful picking of the petals does not hinder the development of the dog rose, which we begin to appreciate for its extremely vitamin C-rich pulp, well before the festivities and which are available until the thaw, depending on the species, the region and the hazards.

Close to the crabapple, the fruits are to be nibbled on the way, like candy without astringency or bitterness. Remove the hairs surrounding the seeds under the flesh, which have sometimes been used as scratching hairs… As for its scent of happiness, it even touches the hearts of grumpy people…

The dog rose bush requires control of the suckers which are adventurous and very thorny. This requires intervention at least once a year to prevent it from invading. By alternating two rose bushes (the lower level) with a hawthorn (the upper level), we keep the deer at bay, on the other side of the hedge.

Edible: petals, berries. Replaces: orange blossom water, vanilla, and other sweet perfumes, crabapples (taste and pectin). Pairing with petals: Buckwheat pancake, yogurt, poultry, rice pudding, cheeses and nuts, date squares, crème brûlée, cider, fruit salad, pastries.
