Hosta 'Blue Ivory'
Hosta
The hosta ‘Blue Ivory’ offers bluish foliage edged in creamy white and lavender flowers. It’s a reliable choice when light is scarce, with its luminous blooms and delicate flavor. The young hosta shoot is harvested early, still tightly curled as it emerges, much like asparagus. It can be enjoyed as an unusual vegetable, its tenderness enhanced after cooking. The flower stalk is also edible, similar to asparagus. The fully opened flower adds a touch of floral sweetness to cooking. Ubiquitous in the horticultural landscape, hostas are edible plants that already contribute to food security. Their mildness and tenderness can attract deer.
