The hosta ‘Guacamole’ offers yellow-green foliage edged in dark green and lavender flowers. It’s a reliable choice when light is scarce, with its bright blooms and delicate flavor. The young hosta shoot is harvested early, still tightly curled when it emerges like asparagus. It can be enjoyed as an unusual vegetable, becoming mildly tender after cooking. The flower stalk can also be eaten like asparagus, while the fully opened flower adds a floral sweetness to dishes. Ubiquitous in the horticultural landscape, hostas are edible plants that already contribute to a degree of food security. Their mildness and tenderness can attract deer.
