The balloon flower ‘Fairy Snow’ (Platycodon grandiflorus) is a much more compact variety than the species. You can harvest the flowers as well as the roots, which will be edible after some preparation. You can harvest the different parts from spring to fall.

Soak the roots in salt water for a few hours then rinse in cold water until they are no longer bitter. This is how Korean ‘doraji’ is prepared, stir-fried in a wok, in marinades, seasoned or with a kimchi spice sauce.
