The balloon flower ‘Mariesii’ (Platycodon grandiflorus) is a slightly more compact variety than the species. The prepared roots as well as the flowers are edible. You can harvest its parts from spring to autumn.

The root is edible after treatment. Soak them in salt water for a few hours then rinse in cold water until the roots are no longer bitter. This is how Korean ‘doraji’ is prepared, stir-fried, in marinades, seasoned or with a kimchi spice sauce.
