Cockspur hawthorn
Crataegus crus-galli
The cockspur hawthorn (Crataegus crus-galli), a small tree or large shrub native to eastern North America, is known for its thorns, as indicated by its name. When used alongside rugged rose bushes, it helps create protective hedges that keep deer and other animals out. In addition, the hawthorn produces clusters of remarkable flowers and fruits called “haws” (similar to crabapples but sweeter), which are rich in pectin and ideal for making naturally delicious jelly. To enhance the flavor, it’s often mixed with other tastier fruits.
Whether planted as a hedge or as an ornamental specimen with an artistic trunk and branches, the cockspur hawthorn can live for hundreds of years.
Once well-established, it can tolerate both soggy soils and drought. Although it thrives in full sun, it can also grow in partial shade, with fruit quality and quantity reaching their peak under full sunlight. The hawthorn’s glossy, hard, and sharp thorns have historically been used to make high-quality toothpicks, even being presented as diplomatic gifts in Canadian protocol. Additionally, an infusion of its leaves makes an interesting herbal tea.
