Fiddlehead fern
Matteucia struthiopteris
The refined cut of the large fronds of this rare edible fern, the fiddlehead fern (Mattheuccia struthiopteris), will soften you with a soft green that makes you look forward to spring. Plan an association that will offer a visual replacement because before fall, it quickly fades, turns brown, and then dries out.
Harvest the spring shoots, the fiddleheads, also called crosiers, before they unfurl casually, taking care to leave enough for sustainability, without letting it expand too much into colonies of rhizomes. The fiddlehead fern can green a riparian strip, with its tolerance to wet, soggy, heavy and clayey soils. Generally, it burns in the sun. In cooking, remove any brown part covering the crosier. Cooking is necessary for it to be edible, destroying any toxicity.
