Kentucky Coffeetree

From the legume family (Fabaceae), the modestly sized Gymnocladus dioicus, also known as the Kentucky Coffeetree, grows even in the poorest soils, with the ability to fix nitrogen and adapt to urban environments. Its seeds are contained in beautiful pods that evolve from yellowish to reddish, hanging on until February. The sweet pulp inside resembles melting caramel, and after roasting, it provides a nutritious coffee substitute. Alternatively, the seeds can be eaten like nuts after roasting.

The graceful foliage, initially reddish with bluish highlights, turns yellow in autumn and gives way to a distinct structure that remains attractive throughout the winter, adorned with the forgotten beans, which are relatively persistent. There are no major insect pests or diseases. However, it is important to note that through its seeds, the Kentucky Coffeetree can become invasive.
