Lungwort (Pulmonaria officinalis) has spotted foliage and changing flowers, going from pink to purplish blue as they bloom. It offers an interesting culinary dimension. Its young edible leaves, tender and slightly astringent, can be eaten raw or cooked. They are ideally harvested in spring.
