The Sea Buckthorn ‘Leikora’ (female) (Hippophae rhamnoides) is a thorny variety native to Germany. Its berries can be harvested from early to mid-October. This northern citrus fruit, with notes of pineapple and passion fruit, is delicious eaten fresh and easily preserved as juice year-round. Packed with vitamin C, it’s a great substitute for lemon, which is ubiquitous in so many recipes, from simple vinaigrettes to meringue pies and seafood dishes. One of the few fruit trees to offer almost excessively juicy yields in poor soil, sea buckthorn thrives on atmospheric nitrogen.

The male produces pollen. The female bears fruit. For optimal yields, the male pollen, dispersed by the wind, fertilizes at least six females, depending on the planting scheme, which must respect a maximum spacing of 30 meters between the male and the furthest female, and possibly on the direction of prevailing winds. Sea buckthorn’s vigorous suckering requires some control. It tolerates pollution and salt spray. It fixes nitrogen.

Replaces: lemon, pineapple, citrus fruits… Pairing: fish and seafood, vinaigrettes, spicy tacos, tofu or orange chicken without orange, pineapple ham without pineapple, lemon tart without lemon, choco-mint and sorbet.
