Siebold’s stonecrop (Sedum sieboldii) is a ground cover with round, fleshy foliage, tinged with blue-green with pinkish edges, which changes color in the fall. Its edible leaves, slightly acidic and crunchy, are perfect for eating raw, bringing an interesting texture to your salads or garnishes. You can harvest them from spring to fall. In the fall, this plant is adorned with pink star-shaped flowers, bringing a decorative touch to the garden.
