Sweet fern
Comptonia peregrina
The sweet fern (Comptonia peregrina) is from the same family as the sweetgale, it forms entire colonies that lie on the sometimes dry and acidic sand, capable of fixing nitrogen from the air for its own growth and that of its companions around it. It name evoking its suave perfume and its particular fern-like appearance, is used in cooking as a balsamic herb and spice. Its stimulating properties prepare for New Year’s Eve and other feasts. The sweet fern takes on a radiant orange color towards the fall.
Edible: catkin (male flower), fruit, aromatic leaf. Replaces: thyme, eucalyptus, nutmeg, clove cardamom. Pairing: potatoes, broad beans or beans, tempeh, fish, apples and pears. Native.
