Myrica gale
Sweetgale (myrica gale) is a native northern plant also known as northern nutmeg or aquatic pepper. It colonizes the banks, bordering the river and its tributaries, holding back the soggy banks against erosion, drinking cheerfully in the spring floods.
The dried fruits ground in the pepper mill will allow a subtle dosage to suit everyone’s taste. The leaves infused in oil will invite you to dip your baguette in it or grill vegetables.
Sweetgale fixes nitrogen from the air, which is practical in riparian strips, where fertilization is not allowed, shading the edges of lakes and rivers and offering a temperate habitat for all kinds of aquatic species.
Replaces: nutmeg, sage, bay leaf, pepper and tea. Food pairings: pea soup, caramelized onions, borscht, stuffed vine leaves, vegetable gratin, meat pie, pork and game, eggs and omelette, and blueberries. Edible: resinous fruit, aromatic leaf, stem as a skewer
