Yellow birch
Betula alleghaniensis
The yellow birch (Betula alleghaniensis) is an iconic tree of Quebec, known for its rapid growth and lifespan that can sometimes exceed 200 years. It thrives even in low sunlight conditions. Its bark, rich in hues of gold, silver, and copper, adds a shimmering glow to any location, with the added bonus of a pleasant rustling sound in the leaves.
The sap, which is enjoyable to drink, can be boiled down into syrup with complex woody flavors or fermented into an aperitif beer. Its leaves, with a surprisingly menthol-like taste of wintergreen, are used in tea or dried and powdered to flavor various desserts.
Its ability to extract minerals and nutrients deeply buried in the soil and redistribute them to the surface when its leaves decompose into nutritious mulch makes the yellow birch a valuable companion for gardening. It tolerates salt and non-permanent flooding.
