Yellow-flowered garlic

With its thin, slender leaves with a blue-tinged coat, yellow-flowered garlic (Allium flavum) has the elegance of a fairy, lighting Bengal lights to celebrate summer, making them dance to the rhythm of the warm winds, spreading the joy of the gardens to the kitchen, its sulphurous bells bursting under the tooth, full of cosmopolitan flavours of caramelised onion. The leaves, like chives, as well as the bulbs, small but abundant after self-sowing, are versatile to cook, replacing garlic and sweet onion.

Growing in arid Mediterranean rock gardens up to the foothills of the Alps, yellow-flowered garlic is easy to grow in any soil that drains well, tolerating both heat and cold. Deer and other pests do not want it. The leek moth does not seem to be too keen on it.
