Yucca (Adam's Needle)
Yucca filamentosa
The spring flowering stalks of the yucca (Adam’s Needle) (Yucca filamentosa) are distinctive in appearance and flavor, reminiscent of asparagus when cooked. They are harvested in the spring. The flower petals, which are generous in size, can also be cooked to add a delicate touch to your dishes. You can enjoy them in early summer. The fleshy fruits, whether boiled or grilled, are not only tasty but also nutritious. They will be ready by fall. To prepare them, remove the seeds (which are also edible when cooked) and the fibers, then bake them like baked potatoes for a delicious side dish.
